The Nutella Semla


Hello all you lovely people,

Last year on a day just like this, I claimed that it was no ordinary day. And I'm here to say that is the case this year as well!

It's World Nutella Day!!

I've also mentioned before how February is a yummy month, because it's got the Nutella day, Valentine's Day (obviously you eat something sweet on Vday) and Fat Tuesday where we eat Semla in Sweden.


This year I decided to combine two yummies in one!
I present to you -- the Nutella Semla!

It is basically a Semla-bun filled with Nutella instead of almond paste and dusted with cocoa powder instead of powdered sugar.

The Nutella Semla


INGREDIENTS

  • Everything needed for the Semla-buns minus the almondpaste and powdered sugar
  • 1 jar of Nutella
  • Cocoa powder

DIRECTIONS

We'll start from where the buns are out of the oven and cooled.

Cut off the top of each bun. I use scissors and cut out a triangular shape. Leave the lid for later use. Empty the middle of the buns, creating little wells. Spoon in as much Nutella as you can fit inside of the wells.

Whip the whipping cream with vanilla sugar until soft peaks and pipe it onto the filled buns using a star tip (I use Wilton 1M). Add the lid on top of the piped cream, very gently pushing down a little. Dust the lids with cocoa powder.

Nutella Cupcakes


Today is no ordinary day - it's World Nutella Day!!

I love Nutella. I mean, really LOVE Nutella. I've mentioned it before, I'm a Nutella nutter. I think Nutella is delicious on bread, on fruit, in fudge (check out my Nutella fudge here), on its own... In fact, the most usual way I eat it is straight out of the jar. How do you eat Nutella? I'm curious.


Another great thing about Nutella is that it is good for baking. I whipped up these Nutella cupcakes in no time at all, and it is a super easy recipe, with very few ingredients. Just four really. You need eggs, flour, whipping cream and of course -- Nutella.






Nutella Cupcakes


Base


INGREDIENTS

  • 400 grams Nutella
  • 4 eggs
  • 160 grams flour

DIRECTIONS

Preheat your oven to 175°C.
Whisk the eggs with the Nutella. It's difficult at first, but it will come together. Add the flour and blend until even. Pour batter into cupcake tins and bake for 10-15 minutes. It's done when the top springs back when you lightly press it. Let cool before adding the frosting.


Frosting


INGREDIENTS

  • 2 big tablespoons Nutella
  • 3 dl whipping cream

DIRECTIONS

Whip the cream until stiff peaks. Mix a third of the whipped cream with the Nutella. Then gently fold the Nutella mixture into the rest of the whipped cream, being careful not to let the air you've whipped into it deflate. Pipe the frosting on top of the cooled bases.





I added sprinkles to my Nutella cupcakes because sprinkles make everything better! Even the flawless Nutella is better with a bit of sprinkles!

Nutella heaven


Hello you lovely people!
I want to share a recipe with you today for another one of my favourite Christmas treats. Last week I wrote about Knäck, which is a traditional Swedish toffee that we eat around Christmas time. You can see the post and get the recipe here.



Today I wanted to introduce you to a more modern sweet treat. It contains my favourite ingredient in the whole world -- Nutella. I'm a Nutella nutter! I love Nutella more than I should, and any recipe with Nutella is a good one in my opinion. This recipe is originally from Tasty Kitchen, but I found it on the blog Sockerrus. And it truly has become one of my Christmas must-haves.

Let's get to it...


Nutella Fudge


INGREDIENTS

  • 1 can of sweetened condensed milk (about 394 grams)
  • 1 teaspoon vanilla powder
  • 200 grams dark chocolate, chopped
  • 400 grams Nutella
  • 40 grams butter (I use salted butter, but you can use unsalted butter and add a bit of salt at the very end)

DIRECTIONS

Prepare a 20x20 cm square pan by lining it with parchment paper.
Put all of the ingredients in a bowl that can be heated, I use a glass bowl. Create a double-boiler by putting the bowl over a pan with simmering water. Melt the ingredients until everything is incorporated and smooth, takes about 5 minutes.
Pour the mixture in the prepared pan and smoothen the top with a spatula. Put in the fridge until set, at least 2 hours.
Cut into squares with a hot knife. Store in an airtight container in the fridge.
